Who doesn’t love peanut butter? How about a ‘healthy’ version of a peanut butter and chocolate cookie? How about one that requires very few ingredients, are pretty easy to make and can be kept in the freezer until you want them!? I know right….. what are you waiting for?

-Ingredients
3/4 cup coconut flour
2 cups smooth peanut butter
1/2 cup sticky sweetener of choice I used monk fruit sweetened maple syrup
2-3 cups chocolate chips of choice * See notes
⠀⠀⠀⠀⠀⠀⠀⠀⠀
-Instructions
1. Line a large baking tray or platter with parchment paper and set aside.
2. In a microwave-safe bowl or stovetop, add your peanut butter and sticky sweetener and melt until combined. Add your coconut flour and mix until a thick batter remains.
3. Using your hands, form small balls and place on the lined plate or tray. Press each ball into a flat cookie shape, using a fork to cross either side. Freezer until firm.
4. Once cookies are firm, melt your chocolate chips. Using two forks, dip each cookie in the melted chocolate until completely combined. Repeat process until all cookies are covered.
5. Refrigerate until firm.

-Ingredients⠀⠀⠀⠀⠀⠀⠀⠀⠀
For the brownie base⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup coconut flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup cocoa powder⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 scoop chocolate protein powder OPTIONAL⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup nut or seed butter of choice almond, sunflower seed etc⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 1/2 cups sticky sweetener of choice maple syrup, monk fruit sweetened maple syrup, etc⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup cooked sweet potato, mashed can use banana or pumpkin⠀⠀⠀⠀⠀⠀⠀⠀⠀
1-2 tbsp Silk Unsweetened Almond Milk ⠀⠀⠀⠀⠀⠀⠀⠀⠀
For the coconut layer⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup coconut oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 1/2 cups shredded unsweetened coconut⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tbsp pure maple syrup⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
-Instructions⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Line a large cake tin or 9 x 9 inch baking pan with parchment paper and set aside.⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. In a large mixing bowl, add your brownie base ingredients and mix well. If the batter is too thick, add more milk of choice until a thick batter remains. Pour the batter into the lined baking pan and press firmly into it. Refrigerate.⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. In a microwave safe bowl or stovetop, melt your coconut oil. 4. Add your shredded coconut and pure maple syrup and mix until fully incorporated. Pour the coconut mixture onto the brownie mixture and refrigerate. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
5. Once chocolate coconut brownies have firmed up, cut into pieces and enjoy!⠀⠀⠀⠀⠀⠀⠀⠀⠀
